The NIHF has announced that one of the UK’s leading Michelin-starred chefs, Spencer Metzger, will headline the Leadership Lunch at Hospitality Exchange 2026, sharing insights from his remarkable career and on leadership, excellence and developing high-performing teams.
Taking place during Hospitality Exchange 2026 at the Crowne Plaza Belfast, Spencer's keynote appearance will form part of the Leadership Lunch and Rising Star Awards, celebrating the next generation of hospitality professionals and recognising the industry's emerging talent.
Widely regarded as one of the UK's brightest culinary talents, Spencer has built an exceptional career at some of the UK's most prestigious restaurants. Formerly Head Chef at The Ritz London, he left to open Row on 5 in Savile Row alongside Jason Atherton. The restaurant was awarded a Michelin Star just weeks after opening. He has also recently launched Chez Rose, his latest restaurant in Mayfair.
Spencer first came to national prominence after winning the prestigious Roux Scholarship in 2019 before being crowned Champion of Champions on BBC Two's Great British Menu in 2022. During his career he has also been recognised with The Caterer's Acorn Award, named Restaurant Awards' Chef to Watch and awarded Master of Culinary Arts by the Royal Academy of Culinary Arts.
At Hospitality Exchange, Spencer will reflect on the experiences that have shaped his career, from apprentice to Michelin-starred chef, sharing lessons on leadership, resilience, mentoring talent and maintaining exceptional standards in one of the world's most demanding industries.
Ahead of the conference, Spencer will also host an exclusive gourmet dining experience at The Merchant Hotel on Monday 12 October, showcasing his distinctive approach to modern British cuisine for Hospitality Exchange guests.
